So here’s what’s in my fridge, plus the usual storecupboard essentials. I need to use this stuff up and it needs to be recipes that I can freeze. Please help!

Chard- big bunch
Savoy cabbage
Carrots
New potatoes
Sweet potatoes
Onions
A few mushrooms

I also have some feta and some halloumi cheese.

What am I going to cook then?

I’m thinking a vegetable tagine, a veggie chilli, a veggie cottage pie with lentils if you have them, or a veggie pie.

how about a gratin, fry off all the vegs for a while then put in a dish sprinkle with the cheese and bake in oven for 20 mins, oh ! cut your taters into cubes and boil for a bit xx

Could make some veg pasties to freeze.

sweet potatoe and feta would be nice as the salty feta would cut through the sweetness of the sweet potatoe. (a pinch of chilli flakes owuld be quite nice too)
Just boil the sweet potatoe until soft mash with a little butter and then stir cubes of feta cheese into the mixture (once cool)
Make a shortcrust pastry - an all lard or veg lard pastry is best - more like a cornish pastry.

Then just fill your pastry, wrap up and freeze.

Potates you could make wedges with for freezing.  cut into wedges (with skn on) par boil or pop in the microwave for about 3-5 minutes depending on how many you have.
then lightly coat in oilive oil - I add a cajun seasoning but you can leave plain or add whatever herbs you like - rosemary goes well (dried).  Then lay out on a baking tray in a single layer and pop into your freezer until frozen, then bag up.

Actually with all the veggies you’ve listed you can parboil and pop in the freezer so you have nice organic frozen veggies on hand whenever you get a bit low on fresh veggies.

you could also make veggie patties/burgers - particularly if you have green lentils too.

Oh I love the sound of veggie pasties. I might get some flaky pastry tomorrow and make some samosas!
