Anyone have any recipes for polenta?? Got a bag and don’t really know what to do with it!!! Veggie recipes please!!

polenta is also known as cornmeal, so you can make cornmeal muffins or any american receipe that calls for cornmeal.

Idid make some polenta up once - but have to say I wasn’t keen, but I have a bag in the store cupboard, when I go downstairs again I’ll have a look to see whatreceipes there are on the back.

I add polenta to pizza dough (dunno why its what the recipe said to do). I’m sure I read a polenta cookie recipe some where. I will have a look and get back to you. Also the ready made polenta I chop up fry with garlic and then add a selection of veggies, fry them all together and serve with a sauce, usually a chilli one

polenta is good at soaking up juices, so added to pizza dought it would mean there’s less likely it will go soggy.

Also good for adding to a sweet dough for a fresh fruit bake as it soaks up the juices without the pastry going soggy.  yum yum Apples and blackberries are nice.

I make pizza dough with polenta sometimes, really works nicely - I have a good recipe I could scan and email.
I also use it to make muffins and have found it especially works well with cheese muffins, and blueberry muffins.

Another couple of recipes here that I can link as I have them in my bookmarks
Biscotti (great with a cup of coffee) - these work out really yummy, however I don’t add the Grand Marnier

Lemon polenta cake, mmmmmmm!
125g butter, 115g polenta, 115g self raise flour, 2 eggs, 175g casetr sugar, grated zest and juice of 2 lemons, 150ml of natural yog.

Chuck butter, poolenta and flour into bowl, mix till breadcrumby. 
Add eggs, keep mixing.
Add sugar, lemons and yog, mix thouroughly.
Spoon into greased tin,
Bake in oven at 180degrees c, for 30 mins.

YUM YUM!  Made at least once a fortnight here, sprinkle with icing sugar for extra yumminess!!!!

thansk everyone! fourinthebed - that lemon polenta cake sounds fab! may have to make some even tho I’m meant to be on a diet!!!!

gypsy rose - how do you make the cheesey polenta??

eden - might have a go at those biscotti - and if you get a chance I’d lvoe the pizza dough recipe

I saute chopped onions, carrots, celery and red pepper with cumin and anything else that smells nice, cook up the polenta and mix it in, sometimes add a tin of tomatoes if I remember, pour the mixture into a roasting tin then sprinkle it with sunflower seeds and bake for a while (sorry that’s useless, prob 20-30 mins?) and then I slice it up and we have some hot with salad or veg and then have cold slices instead of sandwiches for lunch for a few days.

Our local wholefood shop sells something similar (but theirs is much nicer than mine!) - I love it! It would be great with cheese on top too if you’re not vegan smile
