cherry jam recipe

i have loads of morello cherries here that were donated from someone at school and i want to make them into jam.

has anyone doen this before? do i really have to de stone them before i make it. cant i just scoop the stones out when i boil it, like i do with damson jam?


any ideas, best recipes to follow also gratefully recieved!

Had a look in my favourite book. It has a recipe.
2.5kg stoned, cherries, juice of 2-3 lemons, 1.75kg sugar. Simmer the cherries for 30mins with the juice and with some stones tied in a muslin bag. Remove the stones, add the sugar, and stir until dissolved. Boil rapidly to setting point.

I don’t see why you can’t remove the stones later (although you’ll need to account for their weight) when measuring. They help add to the set.

we have cherry plums in our garden and I never stone them before jamming - life’s really too short!!!

The recipe I used does require stoning, but other than that is really, really easy. You stone and chop the cherries and boil them till soft with the juice and zest of one (or two if you have masses of cherries) lemon. Pour the mixture into a measuring jug and add 3/4 of the volume of cherries in sugar ( so I had 16 fl oz of cherries, and added 12 fl oz of sugar) boil them together until the mixture wrinkles on a cold plate.

I loved the recipe as I didn’t have to weigh the cherries and have a set amount. I just popped the stones out too - it wasn’t a huge hastle.
