One of Dd2’s friends has a serious egg allergy and is coming to her birthday party. 2 Years ago to my shame I’d forgotten this and didn’t have suitable alternative for her. This year I’m determined that won’t happen, so before I hit the usual recipe websites, I was wondering if anyone has an egg-free cake recipe they can recommend. It can be anything that I can dress up to look festive like cake, so muffin, or whatever. Thanks!

Love,

This is my favourite chocolate cake recipe and I’m not even Vegan.  I have made it more than once for birthdays and special occasions and it always goes down well.  I usually make it with regular milk too rather than soya.

OMG, that looks waaaay too good to serve to a bunch of undiscriminating 7-year olds! I wouldn’t want to give that away!

Btw, I’ve had a nose around the web for egg free cakes, and several, like this one, have a couple of tbs of vinegar in the recipe. Just out of interest, what does that do? What is its role in the recipe?

Thanks for your suggestion, Ill definitely make that, although maybe not for the party…

When I make cake it is a combination of self-raising flour, sugar (less sugar than flour maybe 3 flour to 2 sugar), oil and water/juice + flavouring.  I never try and do it with bicarbonate and plain flour - can’t make it work and I’ve never bothered with the vinegar either -don’t know what it would be like differently if I did.  I think the key thing is if no eggs, then no solid fat either and oil instead.  I’d give you the recipe but I’ve lost it and at the moment I work on the basis of keep adding various bits until you have approximately the right texture (but a whopping load of cake mix!) hope this helps.

Made the cake, it looks absolutely gorgeous! Will do a simple butter icing with lots of chocolate buttons and such like for the children, as I think i may have put too little sugar in - suddenly got confused with the conversion from cups to grams. But I’m sure I can compensate for that with the icing and toppings! I’ll let you know what it tasted like!
