Courgette recipes please

I think 4 courgette plants and only one person who likes them was a bit silly.  Hence I will either be eating courgette for breakfast, lunch and dinner for the rest of the season, or will have to find some recipes to hide them in!!

Hope you lovely people can give me some inspiration!

Snap- we had our first harvest this week!
There is a nice recipe in this month’s Sainsburys magazine for courgette rarebit- I made it yesterday.
For two people:

Peel and chop 2 medium sized courgettes and one bunch of spring onions. Boil until tender (3-4 mins). Drain well.
In a bowl mix 100g mature cheddar, 2 large eggs, 1 tbsp dijon mustard and season well.
Pour cheese mix over the courgettes.
Top with a handful of parsley and some breadcrumbs, then bake until brown and crispy on top.

How funny, I was just digging out my recipe to pass on to the friend I saw today who was fascinated that on my anti-candida diet I was eating cake!  Well it was a dairy-free, sugar-free, almost wheat-free courgette muffin!

Courgette cake
250g         coarsely grated courgettes (2 or 3)
2         large eggs
125ml   vegetable oil
150g         caster sugar (or xylitol - natural sugar substitute)
225g         self-raising flour (can be wholemeal, or a combo of gluten-free flours)
½ tsp   baking powder
½ tsp   bicarbonate of soda

Cream the eggs, oil and sugar in a mixer.
Sieve in the flour, bicarb and baking powder and beat until well combined.
Stir in the grated courgette.

Pour into lined sandwich tins and bake at 180°C for 30 mins.
Once cooled, spread lemon curd on one cake to form a sandwich.

Alternatively: 
Fill 12 large muffin cases with the cake mixture and bake for 20–25 mins.
Pour hot lemon curd over the cooled muffins and refrigerate.

My children love courgette and feta fritters.  Pretty much make up the recipe and it’s different every time though LOL.

I also blend it in random roast vegetable pasta sauces and soups.  Oh and grate it into most random pasta sauces in general - and sometimes in rissotto.  smile

I hide ours by chopping it very small and adding it to cottage pie.

There is a nigella recipe in “domestic goddess” for a corgette cake. Mixed reviews from this house though - the lime curd for the centre of it was fab, my sister and husband hated it, the in-laws said it was ok, nothing special, but that it repeated later in the evening, and my brother in law ate two slices and loved it before he knew what it was and refused to touch it!

Greek style marrow…never ever tastes the same twice, but always tastes good!   mmm

Slice marrow lengthways down middle and chop off both ends, scoop out seeds (discard if you like) and then using a big spoon scoop out most of the flesh and put aside. Then put shells in large roasting dish with splash of water in the bottom and bung in oven on about 200 for about 10-15 mins. It will then be quite softish.

Chop up the flesh and an onion, soften in a pan with olive oil. Then add a tablespoon of rice per person (approx) and mix a bit, add a glass of white wine if you like and wait for alcohol to burn off. Add about 1-2 tsp ground cinnamon.

Then use stock to sort of risotto the lot for about 15 mins or until rice almost done and most of the liquid absorbed. Take off heat.

Rough chop some feta, fresh/dried herbs (mint is nice) and add to mixture with some raisins and lots of black pepper.

Refill the shells with this mix and then add on top some bread crumbs, mixed seeds and a bit more feta and bake in the oven for about 20 mins or until crispy and brown on top.

A big marrow about 50 cm long will easily feed 6 people as an accompaniment or maybe 4 on it’s own.

Optional extras - garlic, chilli, any other fresh herbs

It’s also really yummy, if not yummier the next day cold!

Courgette and cinnamon muffins!  Will have to look out the recipe when I get home as I’m at work now, but they rock!  Also courgette bread – there’s a recipe in a back issue of GP, not sure which, will check tonight.

Carrot and courgette muffins from the cbeebies website (I can cook).
DS1 has become the greatest veggie hater and he absolutely loves them, and he makes a pretty good fist of making them too smile

we like the nigella courgette cake and its always been a hit when I’ve made it for others. You don’t need to use the lime curd - use lemon or use any other filling you like such as buttercream etc.

Thank you for all your recipes, there’s some lovely ideas there.  I tried the chocolate courgette cake which really is lovely, but next time I will make sure to do it when DH is not around, as he refused to eat it on principle!!
