I am having a nice relaxing Mothers Day tomorrow and cooking for 12 (note the sarcasm!)  Anyone any ideas as to something easy to do, I was going to just do a beef roast, but DH thinks a buffet will be easier.  Need to go and get food today though.  Any ideas gratefully received.

How about a big boiling ham? - you could shove it in a slow cooker either overnight or early in the morning - served with lots of new baby potatoes (no peeling required) and parsley sauce. Some steamed veggies too. Less kitchen time than a roast dinner, less prep. Or cook the ham today and serve it cold with potato salad, rice salad etc. You could prepare all that today.

Buffet probably easier if it’s all pre-made stuff, but personally I think I would go with the beef/ham suggestions.  Hope you have a good day regardless wink.

Jackets, cold meats, salads, homemade coleslaw etc

Beef stew…..but you need a really big pan! Then serve with fresh bread and salad. So easy and you can socialise whilst its cooking.

Wow, what fantastic ideas.  I gone for a leg of pork, DH likes his roast too much!  If I prep as much as I can tonight, should make tomorrow a little easier!  I might bear some of these things in mind for other times though.  Thank you.

Fajitas are great for a lot of people too; as there’s not a huge amount of cooking to do and everyone can assemble their own fajitas.
