It wouldn’t be Christmas without Gingerbread now, would it? For those of us eating clean whole foods this needn’t mean breaking from our lifestyle choices as I’ve discovered a rather good little recipe! I’m not confident I could build a gingerbread house with it just yet, but it makes the most delicious biscuits that get the seal of approval from the littlest members of the household. Please note: this recipe contains nuts.

Ingredients:
• 3 cups of ground almonds
• 1 egg white
• ½ tsp baking powder
• ¼ tsp nutmeg
• ¼ tsp cinnamon
• ½ tsp ginger
• ¼ cup honey
• 1 tsp vanilla extract
• 1 tsp cocoa powder
• 3 tbsp coconut oil
• 5 fresh dates (pitted)
Method:
1. In a food processor, mix together ground almond, dates and ground spices/cocoa powder.
2. When mixture is crumbly, add egg white, vanilla, honey and coconut oil. Mix until a soft dough is formed. If mixture is still crumbly, add water ½ tbsp at a time and repeat.
3. Place between 2 pieces of greaseproof baking paper and roll to about ¼ of an inch thick.
4. Rest in the fridge for at least an hour, preferably overnight.
5. Remove from fridge and cut into shapes. Preheat oven to 160.
6. Place gingerbread shapes onto a tray lined with greaseproof baking paper and bake in the oven for 20+ minutes (check regularly until cookies appear golden).
7. Enjoy!
