I do so love the warmer months, but I am not so much a fan of the constant jingling of the ice-cream van. For dairy intolerant people like myself and my 3 year old daughter, it is a torment and for the rest of the family a daily battle over allocation of finances. If you’re tired of paying over the odds for cheap, unhealthy ice-creams then you will be happy to know we have discovered a quick, easy and wonderfully healthy popsicle recipe that is easy on the purse strings, can be eaten every day and suits little people with a sweet tooth…

Ingredients:

• 1 can of coconut milk
• 6 tablespoons of honey
• 4-6 large strawberries
• 2 cups of frozen summer berries

Method:

1. Throw all ingredients into a blender, mix until smooth.
2. Pour into popsicle/lolly cases.
3. Freeze for 4-6 hours.

Serves: 12-18
