Another magical way to make cauliflower taste like… well… not cauliflower! A lot little on the bitter side, cauliflower has been the only vegetable I have actively avoided I my adult years but a little inventive cooking has turned this once hated food into something I actually enjoy. Best of all, my children love it too. Perfect! This sauce can be used with a variety of dishes or adapted for other recipes. Enjoy!

Ingredients:
• 1 head cauliflower
• 3 cloves crushed garlic
• 1 diced onion
• 1 tin coconut milk
• Dried mixed herbs
• Coconut oil
• Pinch of sea salt
Method:

1. In a sauce pan, chop and boil the cauliflower until soft
2. In a separate frying pan, warm some coconut oil and fry the onion and garlic until aromatic.
3. Throw all of the ingredients into a blender and mix together. Add more salt and other seasonings as desired.
4. Return mixture to a pan and warm through.
5. Serve over meat, fish, vegetables or as part of a pasta based dish like lasagne.
